Celery Root Gratin

- Preheat oven to 400
- Generously butter baking dish
- Peel and cut celeriac into thick slices. place in bowl of cold lemony water
- Mix cream, garlic, nutmeg and thyme
- Drain celeriac and mix in cream.
- layer in baking dish and cover tightly with foil.
- Bake for 45 minutes
- Remove. Turn oven up to 450.
- Uncover. Sprinkle generously with Parmesan.
- Bake 15 minutes.
