Cheese-A-Roni Bake

Ingredients

  • 32 oz. meatless spaghetti sauce
  • 2/3 c. water
  • 15 oz. Ricotta cheese
  • 3 eggs, slightly beaten
  • 1 tsp. dried oregano
  • 8 oz. elbow macaroni
  • 8 oz. shredded Mozzarella

Instructions

  1. Preheat oven to 350°.
  2. In a medium bowl, combine sauce and water.
  3. In another medium bowl, combine Ricotta cheese, eggs and oregano.
  4. Grease a 13 x 9-inch baking dish.
  5. Spoon in 1/3 sauce. Top with 1 cup uncooked elbows, 1/2 Ricotta mixture, 1/2 Mozzarella and 1/3 sauce.
  6. Repeat layering, using remaining macaroni, Ricotta cheese mixture and sauce.
  7. Reserve Mozzarella. Cover with foil.
  8. Bake 45 minutes.
  9. Uncover; top with remaining cheese.
  10. Bake, uncovered, 15 minutes longer.
