- Slowly melt the entire block of Velveeta cheese in a saucepan over low heat.
- Cook sausage, breaking apart until very crumbly; drain excess fat.
- Add cooked sausage to melted Velveeta cheese and mix thoroughly.
- Pour the mixture into a 9 x 13-inch lightly oiled or Pam-sprayed dish and refrigerate until chilled and set.
- When chilled and set, cut into cracker-sized cubes.
- Serve with snack crackers.
