Cheese Cups

Ingredients

  • 5 eggs
  • 24 oz. cream cheese
  • 1 c. sugar
  • 1/2 tsp. vanilla
  • vanilla wafers
  • 1 1/2 c. sour cream
  • 1/2 c. sugar

Instructions

  1. Blend eggs and cream cheese.
  2. Add 1 c. sugar, vanilla and blend until smooth.
  3. Line muffin tins with paper liners.
  4. Place a vanilla wafer in the bottom of each cup.
  5. Pour mixture over wafer.
  6. Fill about 3/4 full.
  7. Bake at 300° for 5 minutes.
  8. A well will form in the cupcake.
  9. Mix sour cream, 1/2 c. sugar and vanilla.
  10. Blend topping until smooth.
  11. Spread over cupcakes.
  12. Add 1/2 tsp. preserves or fruit pie filling to the top of each cupcake.
  13. Return to the oven for 5 minutes.
  14. Chill or freeze.
