Cheese Cups
Ingredients
Instructions
- Blend eggs and cream cheese.
- Add 1 c. sugar, vanilla and blend until smooth.
- Line muffin tins with paper liners.
- Place a vanilla wafer in the bottom of each cup.
- Pour mixture over wafer.
- Fill about 3/4 full.
- Bake at 300° for 5 minutes.
- A well will form in the cupcake.
- Mix sour cream, 1/2 c. sugar and vanilla.
- Blend topping until smooth.
- Spread over cupcakes.
- Add 1/2 tsp. preserves or fruit pie filling to the top of each cupcake.
- Return to the oven for 5 minutes.
- Chill or freeze.
