Ingredients

  • 2 c. low-fat cottage cheese
  • 2 Tbsp. lemon juice
  • 1/4 c. skim milk
  • salt to taste

Instructions

  1. Put all ingredients in the container of a blender.
  2. Blend on low speed until creamy, adding more milk if necessary to produce the desired consistency.
  3. Keep this sauce refrigerated.
  4. Use it as a dressing or an accompaniment to poultry and fish.
  5. It can be substituted for sour cream in dips, spreads, and dressings, but cannot be used in heated dishes like stroganoff.
