Ingredients

  • 6 oz. whole wheat flour
  • 2 oz. white flour, unbleached
  • 1 oz. pinhead oatmeal
  • 1 oz. wheat germ
  • 1 tsp. bicarbonate of soda
  • 1 oz. bran
  • 1 tsp. sugar
  • 1/2 tsp. salt
  • 1/2 pt. buttermilk
  • 1 egg

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 1-pound loaf pan.
  2. In a large mixing bowl, combine whole wheat flour, white flour, pinhead oatmeal, wheat germ, bicarbonate of soda, bran, sugar, and salt.
  3. Add the buttermilk and egg to the dry ingredients.
  4. Mix until a sticky dough forms.
  5. Pour the batter into the prepared loaf pan, smoothing the top.
  6. Bake in the preheated oven for approximately 45 minutes, or until a skewer inserted into the center comes out clean.
  7. Remove from oven and let cool slightly before removing from the pan.
  8. Slice and serve warm or at room temperature.
