Ingredients

  • 1 lb. fresh or frozen, skinless orange roughy, pike, cod or haddock fish fillets
  • 1 (8 oz.) jar pasteurized process cheese spread
  • 1/4 cup milk
  • 1 (10 oz.) package frozen peas
  • 1 cup quick cooking rice

Instructions

  1. Thaw the fish and cut fillets into 1-inch pieces.
  2. In a 1 1/2-quart casserole, stir together the process cheese spread and milk.
  3. Stir in the peas, rice, dill weed, and fish.
  4. Cover and bake in a 375°F oven for 40 to 45 minutes or until heated through.
  5. Stir once or twice during baking.
