Chermoula Fish

Ingredients

  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp hot paprika
  • 2 tbsp roughly chopped fresh cilantro leaves
  • 2 tbsp roughly chopped fresh flat-leaf parsley leaves
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 2 tsp lemon zest
  • 8 (5 oz) white fish steaks
  • None None salad, to serve

Instructions

  1. To make the chermoula, combine garlic, spices, herbs, oil, lemon juice and lemon zest in a large bowl. Place fish in a separate bowl and coat with 1/2 the chermoula. Cover and chill for 15 mins. Reserve remaining chermoula.
  2. Remove fish from marinade. Heat oil in a large frying pan over medium-high heat. Cook fish until browned on both sides and cooked to your liking. Drizzle with reserved chermoula and serve with salad.
