Ingredients

  • 8 cups pitted sour cherries
  • 1 1/2 cups water
  • 10 cups sugar
  • 2 (3 oz.) pouches liquid fruit pectin
  • 1 teaspoon almond extract

Instructions

  1. In a large kettle, bring the cherries and water to a boil. Boil for 15 minutes.
  2. Add sugar and bring to a full rolling boil, stirring constantly. Boil for 4 minutes.
  3. Stir in liquid fruit pectin. Return to a full rolling boil.
  4. Boil for 1 minute, stirring constantly. Remove from heat.
  5. Stir in almond extract.
  6. Skim off foam.
  7. Pour hot preserves into hot jars, leaving 1/4-inch headspace.
  8. Adjust caps and process jars in a boiling water bath for 15 minutes.
