Ingredients

  • 1 gallon cherry juice from drained cherries plus water
  • 1 tsp. salt
  • 1 lb. sugar
  • 1/4 cup lemon juice
  • 2 cups quick cooking tapioca
  • 6 cups tart cherries, drained
  • 2 tsp. almond extract
  • whipped topping (optional)

Instructions

  1. Bring cherry juice, salt, sugar, and lemon juice to a boil.
  2. Gradually add quick cooking tapioca into the boiling mixture.
  3. Cook on low heat for 15 minutes, stirring continually. Remove from heat and let cool.
  4. Fold in drained tart cherries and almond extract. Chill until ready to serve.
  5. Serve topped with whipped topping if desired.
