Cherry Tomato Appetizers

Ingredients

  • 40 cherry tomatoes
  • 7 1/2 oz. tuna
  • 4 oz. cream cheese, softened
  • 2 Tbsp. onion, grated
  • salt and pepper to taste
  • 2 Tbsp. lemon juice
  • heavy cream to moisten (about 1 Tbsp.)

Instructions

  1. Cut a thin slice from stem end of each tomato.
  2. Remove pulp and invert on paper towel to drain.
  3. Combine all other ingredients to form a consistency.
  4. Stuff tomatoes using a small spoon. Garnish with parsley.
  5. Make ahead and chill.
  6. Yields 40.
