Ingredients

  • 8 leg quarters
  • 3 cups rice
  • salt

Instructions

  1. Boil leg quarters until tender.
  2. Remove chicken from the bones and set aside.
  3. Measure 2 cups of chicken broth for each cup of rice.
  4. Add salt and pepper to taste.
  5. Bring the rice and chicken broth to a boil.
  6. Reduce heat to low and cook the rice for 35 minutes.
  7. Add the cooked chicken back to the rice before the rice finishes cooking.
