Chicken Enchilada Balls

Ingredients

  • 1 lb ground chicken
  • 4 ounces cream cheese, softened
  • 1/2 cup monterey jack pepper cheese, shredded
  • 1/2 cup sour cream
  • 1 (4 ounce) can of chopped green chilies
  • 1 (1 1/2 ounce) package of dry dry enchilada mix
  • 1 cup breadcrumbs

Instructions

  1. Mix all the ingredients together except for the bread crumbs.
  2. Shape the mixture into balls; roll in bread crumbs.
  3. Bake at 350 degrees for 40 minutes on a lightly greased baking sheet.
  4. You can serve them with or without a dipping sauce consisting of 1/2 cup sour cream and 3/4 cup mild enchilada sauce.
