Ingredients

  • 1/2 cup medium hot chunky taco sauce
  • 1/4 cup Dijon mustard
  • 2 tablespoons lime juice
  • 6 boneless, skinned chicken breasts
  • 2 tablespoons butter
  • 6 tablespoons sour cream
  • 1 lime, sliced

Instructions

  1. In a large bowl, combine medium hot chunky taco sauce, Dijon mustard, and lime juice; mix well.
  2. Add chicken breasts to the marinade, turning to coat evenly, and marinate for 30 minutes.
  3. In a large heavy skillet, melt butter over medium heat until foamy.
  4. Remove chicken from the marinade and fry until browned on all sides, turning frequently.
  5. Add remaining marinade to the skillet and cook for about 5 minutes longer, until chicken is fork-tender.
  6. Remove chicken from the skillet, boil the marinade for 1 minute, and spoon it over the chicken.
  7. Top each piece of chicken with 1 tablespoon of sour cream and a lime segment.
