Ingredients

  • 8 oz. chicken cutlets
  • 3/4 tsp. butter
  • 1/8 cup dry white vermouth
  • 1/8 cup lemon juice

Instructions

  1. Rinse and pat dry the chicken cutlets.
  2. Melt butter in a medium skillet over medium heat.
  3. Saute the chicken for 2 to 3 minutes on each side until golden.
  4. Add the dry white vermouth and half of the lemon juice to the skillet.
  5. Cover and raise the heat to high for 2 minutes.
  6. Add the remaining lemon juice to the skillet.
  7. Simmer, uncovered, until the chicken is cooked through and the sauce has thickened slightly.
  8. Transfer the chicken and sauce to a small platter and garnish with oil.
