Ingredients

  • 1 lb. chicken breasts or cutlets, cut in small pieces
  • salt and pepper
  • 1 envelope chicken bouillon powder
  • 2 fresh garlic cloves, minced
  • 3 Tbsp. minced fresh parsley
  • 1 bay leaf
  • juice of 2 lemons
  • 1/2 c. water
  • 1/2 lb. sliced mushrooms

Instructions

  1. Sprinkle chicken with salt, pepper and the bouillon concentrate.
  2. Saute in heavy skillet until slightly browned.
  3. Add minced garlic, parsley and bay leaf; stir well.
  4. Add lemon juice, water and mushrooms.
  5. Simmer 45 minutes.
  6. I add 1/2 pound sliced mushrooms.
