Chicken Tampico

Ingredients

  • 3 large chicken breasts (precooked and cut in bite size pieces)
  • 1 bell pepper
  • 1 can cream of mushroom soup
  • 1/2 c. drippings from chicken
  • 1 (8 oz.) can green chili salsa
  • 1 pkg. corn tortillas
  • 2 c. grated Longhorn cheese

Instructions

  1. Mix chicken, soup, salsa, broth and 1/2 bell peppers.
  2. Cut tortillas into strips.
  3. Moisten with chicken broth.
  4. Make 2 layers of tortillas, chicken and cheese.
  5. Top with remaining pepper. Bake at 350° for 30 minutes.
