Chicken With Prunes

- Season the chicken with salt and pepper
- Add 1 tablespoon of olive oil to a skillet and heat on medium heat.
- Place the chicken into the skillet and lightly it until each side turns golden. The chicken does not have to be fully cooked. Remove the chicken from the skillet and set aside.
- Add the onion and garlic to the skillet and saute for 2 minutes.
- Add the chopped tomatoes and cook for 2 minutes
- Place the chicken into the skillet again and let it cook for another 5 minutes.
- Add the mashed tomato, prunes, and water. Cover the skillet and cook for about 10 minutes.
- Add the bell pepper and cook for 3 minutes.
- Serve the chicken with tortillas.
