- Rinse off green chiles and pat dry.
- Separate 6 egg yolks and whites.
- Beat whites till fluffy (about 5 min).
- Add in 6 Tbsp.
- of flour to egg yolks, then fold into whites.
- Cut up Jack cheese and stuff into chiles.
- Dip chiles to coat with egg mix and fry till brown.
- Serve with salsa.
