Ingredients

  • 2 cups fresh or frozen raspberries, thawed
  • 1/2 cup peach or apricot nectar
  • 1 envelope unflavored gelatin
  • 1 teaspoon lemon juice
  • 4 packets Equal

Instructions

  1. In a blender, combine 2 cups of raspberries and nectar.
  2. Cover and process until smooth.
  3. Sieve to remove seeds.
  4. Combine about 1/3 cup of the puree in a saucepan with gelatin; let stand 5 minutes, then heat and stir until gelatin is dissolved.
  5. Remove from heat; stir in lemon juice, Equal, and remaining puree.
  6. Place in a large mixer bowl.
  7. In a chilled small mixing bowl, beat evaporated milk until soft peaks form and mixture triples in volume.
  8. Gradually fold in the gelatin mixture.
  9. Gently fold the mixture into 1 cup of whole berries.
  10. Pour into parfait glasses over a layer of raspberries.
  11. Cover and chill for 4 to 8 hours before serving.
