- In a blender, combine 2 cups of raspberries and nectar.
- Cover and process until smooth.
- Sieve to remove seeds.
- Combine about 1/3 cup of the puree in a saucepan with gelatin; let stand 5 minutes, then heat and stir until gelatin is dissolved.
- Remove from heat; stir in lemon juice, Equal, and remaining puree.
- Place in a large mixer bowl.
- In a chilled small mixing bowl, beat evaporated milk until soft peaks form and mixture triples in volume.
- Gradually fold in the gelatin mixture.
- Gently fold the mixture into 1 cup of whole berries.
- Pour into parfait glasses over a layer of raspberries.
- Cover and chill for 4 to 8 hours before serving.
