Ingredients

  • 18 1/4 oz. chocolate cake mix
  • 1 1/3 cups water
  • 1/2 cup vegetable oil
  • 3 eggs
  • 21 oz. can cherry pie filling
  • 16 oz. can vanilla frosting

Instructions

  1. In a mixing bowl, combine the chocolate cake mix, water, vegetable oil, and eggs; mix well.
  2. Spoon batter by 1/4 cupfuls into paper-lined muffin cups.
  3. Spoon a rounded teaspoon of cherry pie filling into the center of each cupcake.
  4. Set remaining pie filling aside.
  5. Bake at 350°F (175°C) for 20 to 25 minutes or until a toothpick inserted on an angle toward the center comes out clean.
  6. Remove from oven and transfer to a wire rack to cool completely.
  7. Frost cupcakes with vanilla frosting.
  8. Top each cupcake with one cherry from the pie filling.
  9. Serve with remaining pie filling or refrigerate for another use.
