- thermometer),
- stirring
- as it heats.
- Whisk in 9 eggs, one at

- time.
- Pour
- into an 11-inch spring-form pan (buttered, lined with
- foil and buttered again).
- Bake at 250° for 2 hours. Cool
- and refrigerate.
- Make at least 8 hours or one full day before serving.
