Delicate chocolate leaves create a beautiful edible decoration with a subtle chocolate flavor, perfect for garnishing desserts or adding an elegant touch to special occasions.

Ingredients

  • 12 camellia leaves or other rigid leaves 2 inches long
  • 2 oz semi-sweet chocolate
  • 1/4 tsp vegetable shortening

Instructions

  1. Wipe leaves clean with a dry towel, avoiding water.
  2. In a double boiler over hot (not boiling) water, melt 2 ounces semi-sweet chocolate with 1/4 teaspoon vegetable shortening.
  3. Using the back of a teaspoon, coat the undersides of the leaves with chocolate, being careful not to coat the edges.
  4. Place the coated leaves on a tray in the refrigerator or freezer to harden.
  5. When ready to use, loosen the edges and gently peel the leaves away from the chocolate, starting at the stem end.
