Ingredients

  • 1 lb. lima beans
  • 1 1/2 c. sugar
  • 1 tsp. salt

Instructions

  1. Soak lima beans overnight in water.
  2. Cook beans slowly until the skin comes off.
  3. Mash beans until soft (like mashed potatoes) in a strainer, placing a pan under the strainer to catch the bean pulp and water.
  4. Run faucet water through the strainer to help wash pulp down.
  5. Strain beans until only skins are left in the strainer.
  6. Throw away the skins.
