Chocolate Pecan Bread Pudding

Ingredients

  • 1 1/2 cups milk
  • 2 cups light cream
  • 1/3 cup sugar
  • 1 tsp vanilla extract
  • 4 None eggs
  • 8 oz ciabatta bread, thickly sliced
  • 4 oz semi-sweet chocolate, coarsely chopped
  • 1/3 cup coarsely chopped toasted pecans

Instructions

  1. Preheat the oven to 325°F. Grease a shallow 2-quart baking dish.
  2. Make custard by combining milk, cream, sugar and vanilla extract in medium saucepan; bring to a boil. Whisk eggs in large bowl; whisking constantly, gradually add hot milk mixture.
  3. Layer bread, chocolate and nuts, overlapping slices slightly, in prepared dish. Pour custard over bread. Place baking dish in large baking pan. Add enough boiling water to come halfway up sides of baking dish.
  4. Bake pudding about 45 mins or until set. Remove pudding from baking pan. Let stand 5 mins before serving.
