Ingredients

  • 2 gallons cucumber rings (about 15 large cucumbers)
  • 2 cups lime
  • 8 1/2 quarts water
  • 1 cup vinegar
  • 1 tablespoon alum
  • 2 ounces red food coloring
  • 6 cups water
  • 5 pounds sugar
  • 1 large package red hot cinnamon candies

Instructions

  1. Peel, core, and slice the cucumbers into rings.
  2. Place the cucumber rings in a solution of lime and water for 24 hours.
  3. Lift the rings out of the solution, wash, and drain well.
  4. Repeat the soaking process two more times, each time adding vinegar, alum, and enough water to cover the rings.
  5. Add red food coloring to the solution.
  6. Heat and simmer the rings in the solution for 2 hours.
  7. Remove the rings from the solution and discard the liquid.
  8. Make the syrup by combining 6 cups of water, sugar, red hot cinnamon candies, 6 cups of vinegar, and cinnamon sticks. Bring to a boil.
  9. Pour the hot syrup over the cucumber rings.
  10. Cover and let set overnight.
  11. Drain the syrup from the jars.
  12. Reheat the syrup and pour it over the rings again.
  13. Let set overnight again.
  14. Repeat this process for 3 days.
  15. On the third day, heat the mixture to boiling.
  16. Pack the cucumber rings into jars and seal.
