Ingredients

  • 7 lb. cucumbers
  • 1 c. lime
  • 1 c. vinegar
  • 1 bottle red food coloring
  • 1 Tbsp. alum
  • 2 c. vinegar
  • 10 c. sugar
  • 8 cinnamon sticks

Instructions

  1. Peel, core, and slice large, overripe cucumbers.
  2. Soak cucumbers in lime and water for 24 hours.
  3. Wash cucumbers and soak in ice water for 2 hours.
  4. Combine vinegar, sugar, red food coloring, alum, and cinnamon sticks in a large pot.
  5. Bring mixture to a boil, then add the prepared cucumbers.
  6. Simmer until cucumbers are translucent and flavors meld.
  7. Pack pickles into sterilized jars and pour hot syrup over them.
  8. Seal jars and process in a boiling water bath for preservation.
