Citrus Baked Halibut

Ingredients

  • 1 lb. fresh or frozen halibut steak, cut 3/4-inch thick
  • 1/3 c. finely chopped onion
  • 1 clove garlic minced
  • 1 Tbsp. margarine or butter
  • 2 Tbsp. snipped parsley
  • 1/2 tsp. finely shredded orange peel
  • 1/4 c. orange juice

Instructions

  1. Preheat oven to 400°.
  2. Thaw fish if frozen.
  3. Arrange in an 8 x 8 x 2-inch baking dish.
  4. Cook onion and garlic in margarine until tender.
  5. Remove from heat.
  6. Stir in parsley, orange peel, 1/4 teaspoon salt and 1/8 teaspoon pepper.
  7. Spread over fish.
  8. Sprinkle orange and lemon juices over all.
  9. Bake, covered, in a 400° oven for 15 to 20 minutes or until fish flakes easily with a fork. Spoon pan juices over fish.
  10. Serves 4.
