Ingredients

  • 8 to 10 lb. standing rib roast
  • 2 tsp. grated orange peel
  • 2 cloves crushed garlic
  • 1 tsp. dried thyme leaves
  • 1 tsp. salt

Instructions

  1. Combine grated orange peel, crushed garlic, dried thyme leaves, and salt; rub evenly over the surface of the rib roast.
  2. Do not add water to the roast.
  3. Do not cover the roast during cooking.
  4. Roast at 350°F (175°C) for 3 to 4 hours, depending on desired doneness.
  5. Let the roast stand for 20 minutes before carving.
