Ingredients

  • 28 oz. can whole tomatoes (undrained), cut up
  • 15 oz. garbanzo beans (undrained)
  • 2 cups cubed potatoes
  • 1 cup dry lentils
  • 1 cup thinly sliced carrots
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 3 teaspoons chili powder
  • 1 teaspoon garlic salt

Instructions

  1. In a 4-quart saucepan or Dutch oven, combine all ingredients and mix well.
  2. Bring to a boil, then reduce heat to simmer.
  3. Cover and cook for 45 to 55 minutes or until vegetables and lentils are tender.
