Ingredients

  • 3 c. all-purpose flour
  • 2 tsp. grated lemon zest
  • 1 c. salted butter, chilled
  • 6 to 8 Tbsp. ice water

Instructions

  1. Mix flour and lemon zest together in a medium bowl.
  2. Cut in chilled butter using a pastry cutter or two knives until the mixture resembles coarse meal.
  3. Add ice water, one tablespoon at a time, and blend until the dough can be gathered into a ball.
  4. Divide the dough in half, flatten into disks, and wrap tightly in plastic wrap.
  5. Refrigerate for 1 hour or until the dough is firm.
