- Place the sugar, corn syrup and water in saucepan over low heat.
- Stir until sugar is dissolved, then cook to 225° (a little dropped into cold water forms a hard ball).
- Remove from heat; pour, beating constantly, in a fine stream into 3 egg whites. Continue beating until mixture holds its shape and loses its gloss.
- Add the vanilla and broken nuts.
- Drop quickly from tip of buttered spoon onto waxed paper in individual peaks.
