Ingredients

  • 3 Tbsp sugar
  • 2 1/2 tsp salt
  • 2 pkg active dry yeast
  • 6 c all-purpose flour
  • 1 1/2 c water
  • 1/2 c milk
  • 1/2 c butter

Instructions

  1. In a large bowl, combine sugar, salt, yeast, and 2 cups of flour.
  2. In a 1-quart saucepan over low heat, warm water, milk, and 3 tablespoons of butter until very warm (120° to 130°).
  3. Gradually beat the warm liquid into the dry ingredients on low speed with a mixer until blended.
  4. Increase the mixer speed to medium and beat for 2 minutes, occasionally scraping the sides of the bowl.
  5. Beat in 1 cup of flour to create a thick batter.
  6. Continue beating for 2 minutes using a wooden spoon.
  7. Stir in 2 1/2 cups of flour to make a soft dough.
  8. Turn the dough onto a lightly floured surface and knead until smooth and elastic, about 10 minutes.
  9. Work in about 1/2 cup of flour while kneading.
  10. Shape the dough into a ball, place in a greased large bowl, and turn to grease the top.
  11. Cover the bowl with a towel and let rise in a warm place away from drafts for about 1 hour, until doubled in size.
