Ingredients

  • 1 box butter flavor cake mix
  • 2 cups sugar
  • 1 (8 oz.) sour cream
  • 1 (12 oz.) package coconut
  • 1 1/2 cups whipped cream or whipped topping

Instructions

  1. Prepare the cake according to the directions on the box using two 8-inch layer pans.
  2. Allow the cake layers to cool completely.
  3. Split both layers horizontally.
  4. Mix together the sugar, sour cream, and coconut to make the filling.
  5. Chill the filling mixture.
  6. Spread all but 1 cup of the sour cream mixture between the layers.
  7. Blend the remaining cup of the mixture with whipped cream or whipped topping.
  8. Spread the whipped cream mixture on top and sides of the cake.
  9. Seal the cake in an airtight container and refrigerate for 3 days before serving.
  10. Keep refrigerated after cutting.
