Ingredients

  • 8 oz dried linguine
  • 3 tbl. olive oil
  • 1/2 lb. stemmed and quartered fresh mushrooms
  • 1/2 cup julienned Sundried tomatoes packed in olive oil
  • 2 tbl. julienned fresh basil
  • 3 to 4 minced cloves garlic
  • 1 cup julienned spinach
  • 4 to 6 oz. crumbled feta cheese

Instructions

  1. Cook linguine drain, rinse with cold water, drain again, set aside
  2. Heat olive oil in large saute pan
  3. Add mushrooms, sundried tomatoes and basil, saute over medium heat two or three minutes.
  4. Add garlic and saute another minute
  5. Add spinach, feta cheese and linguine to saute mixture tossing briefly.
  6. Salt to taste.
  7. Divide pasta between two plates and garnish with reserved feta
