Ingredients

  • 1 1/2 lb. cucumbers
  • 1/2 to 1 cup water
  • 3/4 tsp. salt

Instructions

  1. Wash and cut cucumbers into thick slices or quarters.
  2. Heat water and salt to boiling; add cucumbers.
  3. Cover pan tightly to prevent escape of steam and heat again to boiling.
  4. Reduce heat at once and simmer for 10 to 15 minutes.
  5. Drain the cooked cucumbers.
  6. To serve, season with pepper and butter.
  7. Optional: Top with Hollandaise Sauce.
