Ingredients

  • 7 lb. cucumbers
  • 1 box alum
  • 1 qt. lime
  • 1/2 box allspice
  • vinegar
  • salt
  • 6 lb. sugar

Instructions

  1. Soak cucumbers in lime water for 11 or 12 hours.
  2. Wash cucumbers in cold water and soak in salt water for 4 hours.
  3. Drain the cucumbers.
  4. Soak cucumbers in clear water for 2 hours.
  5. Bring alum water to a boil and add the cucumbers to it.
  6. Wash the cucumbers in hot water.
  7. Boil the cucumbers in vinegar with spices mixture for 30 minutes.
  8. Let the pickles stand overnight.
  9. Can and store the pickles.
