Ingredients

  • 2 1/2 cups heavy cream
  • 6 tbsp powdered sugar
  • 1/2 tsp almond extract
  • 2 (9 oz) boxes chocolate shortbread cookies, plus extra crumbs to garnish
  • 1 cup fresh raspberries, plus extra to garnish
  • None None chocolate curls and fresh mint, to garnish

Instructions

  1. Whip heavy cream, powdered sugar and almond extract to soft peaks. Set aside.
  2. Arrange a single layer of cookies in an 8 inch circle on a serving platter. Spread 1 cup whipped cream over top. Repeat layers, ending with whipped cream. Freeze until firm.
  3. To serve, sprinkle with cookie crumbs and chocolate curls. Garnish with fresh raspberries and mint.
