Ingredients

  • 1 lb. angel food cake mix
  • 15.75 oz. can Comstock lemon pie filling
  • 1/2 pkg. Jell-O instant lemon pudding

Instructions

  1. In a bowl, blend together the angel food cake mix and lemon pie filling.
  2. Spread the batter evenly on a parchment paper-lined cookie sheet, within 1 inch of the edges.
  3. Bake in a 350°F oven for 13 to 16 minutes or until lightly browned.
  4. Carefully lift the cake out of the pan using the ends of the parchment paper.
  5. Leave the cake on the counter for exactly 8 minutes.
  6. Roll up the cake into a roll, covering the ends with paper towels or plastic wrap.
  7. Let the cake cool completely before unrolling, approximately 2 hours.
