Corn Cheese Chowder

Ingredients

  • 3 c. diced potatoes
  • 1/2 c. diced celery
  • 1/2 c. diced onions
  • 2 bay leaves
  • 2 tsp. basil
  • 2 c. water plus 1 Tbsp. butter
  • 1 (17 oz.) can creamed corn
  • 1 c. chopped tomatoes, canned
  • 2 c. half and half
  • 1 1/2 c. grated Cheddar cheese

Instructions

  1. Cook potatoes, celery, onions, bay leaves, basil and water until tender.
  2. Add remaining ingredients except cheese and heat thoroughly.
  3. Add cheese and continue cooking until cheese melts. Sprinkle with chopped fresh parsley before serving.
