Cornflake Crumb Parmesan Chicken

Ingredients

  • 1 cup corn flake crumbs
  • 1/2 teaspoon salt
  • 2 -3 lbs chicken pieces or 6 chicken breast halves
  • 1/4 teaspoon pepper
  • 1/3 cup parmesan cheese
  • 2 egg whites
  • 2 tablespoons skim milk

Instructions

  1. Combine crumbs, salt, pepper and cheese.
  2. Beat the egg whites slightly with fork or whisk.
  3. Mix the milk into the egg whites.
  4. Dip chicken pieces in egg white mixture; then coat with crumbs.
  5. Place chicken in a greased shallow pan in a single layer.
  6. Bake at 350 degrees F. for about 1 hour or until done.
  7. Do not cover or turn while baking.
