Corny Cornmeal Pudding

Ingredients

  • 1/3 c. bacon fat
  • 1 medium chopped onion
  • 1/3 c. chopped green pepper
  • 1 3/4 c. milk
  • 3/4 c. corn meal
  • 2 eggs
  • 1 tsp. salt
  • 1 dash red pepper
  • 34 oz. creamed corn (approximately)

Instructions

  1. Saute onion and bell pepper in bacon fat.
  2. Add other ingredients and mix well.
  3. In a baking dish, approximately 17 x 11 x 2 1/2-inch, bake at 350° for 40 minutes.
