Cranberry Cheesecake

Ingredients

  • 2 (8 oz.) pkg. cream cheese, softened
  • 1/2 c. sugar
  • 1/2 tsp. grated orange peel
  • 1/2 tsp. vanilla
  • 2 eggs
  • 3/4 c. chopped cranberries

Instructions

  1. Mix cream cheese, sugar, orange peel, eggs and vanilla with mixer on medium speed until well blended.
  2. Stir in 1/2 cup of the cranberries.
  3. Pour into crust.
  4. Sprinkle with remaining 1/4 cup of cranberries.
  5. Bake at 350° for 40 minutes or until center is almost set.
  6. Cool.
  7. Refrigerate 3 hours or overnight.
  8. Makes 8 servings.
