Ingredients

  • 8 1/4 oz. can pineapple tidbits
  • 3 oz. pkg. black raspberry jello
  • 2 c. boiling water
  • 1 c. cold water
  • 2 Tbsp. lemon juice
  • dash of salt
  • 2 c. fresh cranberries
  • 1/2 unpeeled orange
  • 3/4 c. sugar
  • 11 oz. can mandarin oranges

Instructions

  1. Drain the pineapple and reserve the juice.
  2. Dissolve the raspberry jello in hot water.
  3. Add cold water, pineapple juice, lemon juice, and a dash of salt to the gelatin.
  4. Chill until the gelatin is partially set.
  5. Put the cranberries and orange through a food chopper.
  6. Add sugar, the drained pineapple, and mandarin oranges to the chopped fruit.
  7. Stir the fruit mixture into the partially set gelatin.
  8. Pour the mixture into a mold and chill until firm.
