Cranberry Mango Compote

Ingredients

  • 1 lb. fresh cranberries
  • 2 c. sugar
  • 1 c. water
  • 2 large mangoes, peeled and diced
  • 1 Tbsp. vanilla extract
  • 1/4 c. Grand Marnier or Triple Sec

Instructions

  1. Combine cranberries, sugar and water in medium acid-resistant saucepan.
  2. Bring to very slow simmer over medium heat.
  3. Stir only to mix; avoid mashing the fruit.
  4. Allow to cook about 30 minutes. Fruit will be very tender.
  5. Add the mangoes, vanilla and Grand Marnier (or Triple Sec).
  6. Return to simmer a few minutes.
  7. Remove from heat and transfer to serving dish.
  8. Refrigerate until ready to serve.
  9. Keep refrigerated.
