Ingredients

  • 1/2 cup apple-raspberry juice concentrate
  • 1 cup cranberries, coarsely ground
  • 1/2 cup chopped dates
  • 2 tablespoons honey
  • whole wheat dough

Instructions

  1. Bring apple-raspberry juice concentrate to a boil; add cranberries and chopped dates.
  2. Cover and cook until moist and thickened, stirring occasionally.
  3. Add honey and remove from heat.
  4. Stir in nuts and cool completely.
  5. Roll dough into a rectangle 20 x 6 inches, 1/2 inch thick.
  6. Spread filling over the center third of the dough lengthwise.
  7. Cut 1-inch slices, 2 inches long, on each long side of the dough.
  8. Starting at one end, fold strips at an angle across the filling, alternating sides.
  9. Place the pastry on an oiled cookie sheet.
  10. Gently brush the top with 2 tablespoons apple juice concentrate.
  11. Cover and let rise in a warm place until almost doubled in size.
  12. Bake at 350°F (175°C) for 20 to 25 minutes or until golden brown.
  13. Remove from the cookie sheet and cool before serving.
