Crawfish And Pasta

Ingredients

  • 3 lb. cooked crawfish, well seasoned with crab boil
  • 1 bunch green onions, chopped
  • 1 stick butter
  • 1 1/2 c. heavy cream
  • 1 lb. fresh pasta

Instructions

  1. Peel crawfish tails, reserving heads.
  2. Make a stock by boiling heads in 2 cups water for 5 minutes.
  3. Saute tails and green onions in butter until hot.
  4. Add 3 to 4 tablespoons of the stock and the cream.
  5. Heat but do not boil.
  6. Should be slightly thick.
  7. Cook pasta.
  8. Add sauce and toss.
  9. Heat over medium heat.
  10. Serve immediately.
  11. Shrimp can be used in place of crawfish.
