Cream-Dressed Cucumbers

Ingredients

  • 2 cucumbers (about 2 cups)
  • 12 cup sour cream
  • 1 teaspoon white wine vinegar or 1 teaspoon rice vinegar
  • 1 teaspoon sugar
  • 1 teaspoon dried chives
  • 1 teaspoon parsley flakes
  • 12 teaspoon salt
  • 12 teaspoon dried dill weed
  • 18 teaspoon fresh ground pepper

Instructions

  1. Using the tines of a fork, score the cucumber peel from end to end all the way around it.
  2. Now peel the cucumbers and slice them thinly.
  3. Combine the sour cream and remaining ingredients.
  4. Stir the cucumbers into the dressing.
  5. Refrigerate if not eating immediately.
