Crisp Fried Shrimp

- Shell and devein shrimp, leaving tails intact.
- In small bowl, beat eggs, cream and salt until well blended.
- Pour into shallow dish or pie plate.
- Measure bread crumbs onto wax paper.
- Dip shrimp into egg mixture, then bread crumbs, coating well. Refrigerate in single layer on cookie sheet for 1 hour.
- Pour oil into a medium size saucepan to a 2-inch depth.
- Heat to 350°.
- Fry shrimp, a few at a time, about 2 minutes or until golden brown. Remove with slotted spoon to a paper towel to drain.
- Keep in 250° oven until all the shrimp are cooked.
