Ingredients

  • 1 (5 lb.) duck
  • 1 Tbsp. salt
  • 1/4 tsp. Accent (optional)
  • 1 tsp. white pepper

Instructions

  1. Mix salt, Accent (if using), and white pepper.
  2. Defrost the duck thoroughly.
  3. Rinse inside and outside of the duck and let it dry for half an hour.
  4. Rub the seasoning mixture evenly on the duck and inside the cavity.
  5. Place the duck in the refrigerator for about 24 hours.
